Summary:

Under the general guidance and supervision of the General Manager and within limits of establish Hilton Hotel policies, procedure of Food & Beverage Manual, he will be fully responsible to establish all operation procedures and necessary actions to be taken to guide any manager all activities and staff of the concerned department. To establish and maintain the highest level of quality, training, motivation,etc. With regards to the established guidelines.

Responsibilities:

· Determines operational policies and standards on all Food & Beverage matters of hotel level.

· Establishes standards of food & beverage sales, trends and inventories.

· Recommends changes or innovations in policies, procedures and equipment.

· Confers with management on reports, forecast budgets, policies and future planning.

· Reviews price, sources of supply, food & beverage sales, trends and inventories.

· Ensures top quality food and service to have complete guests'satisfaction.

· Informs management on sales submits monthly financial statements and comments on the operation.

· Ensures that goals are achieved as outlined in the profit budget.

· Ensures that the maximum departmental profit achieved.

· Ensures that the department operates within the budget.

· Ensures that all licenses for the entire department is approved and available.

· Prevents description of the department by overseeing all supplies and service.

· Meets purveyors to learn new products or methods.

· Ensures that a training program is available and followed.

· Ensures that all employees are trained to an international standard.

· Ensures that all departments maintain speed and standards of excellence.

· Review departmental programs to ensure development of future departmental heads.

· Review regular career paths with the General Manager.

· Ensures that the staff is highly disciplined, motivated, friendly and well mannered.

· Conducts salary reviews of personnel annually.

· Ensures that local employees are developed to take over some of the expatriate jobs in the future.

· Ensures that the entire department is well maintained and clean at all times.

· Ensures that a high standard of hygiene is achieved including store and kitchens.

· Generates congenial environment within the department for productivity and improvements on overall standards of service.

· Recommends ways and means to improve sales and cut costs.

· Ensures awareness of trends, practices and equipment in food & beverage preparation and service.

· Keeps him aware of what the competition is doing the makes sure prices comparisons up-to -date at all times.

· Maintains the highest standard of personal professional image, conduct, knowledge and skills related to the job responsibility.

· Establishes & maintains effective employee relations at all times.

· Maintains professional business confidentiality.

· Participates in, or executes, any other tasks that may be assigned by management within the scope of the companies' business.

· Performs any other duty as assigned by the General Manager.
