2. 负责餐饮部所有餐厅及厨房的卫生。负责所有器具的保养和成本

? 作好餐前准备和食品的准备工作
? 协助监督管理菜单上项目的备料准备工作
? 协助监督管理粗加工食品的准备工作
? 协助监督管理厨房使用设备的准备工作


3. 储备工作

? 管理厨房物品的签收和保管
? 控制所有的瓷器、玻璃器具、餐具及不锈钢用品并建立库存量

4. 清洁并管理设备及工作区

? 负责厨房、餐厅设备的清洁和保管
? 负责厨房工作区的卫生
? 负责垃圾的清理
? 负责厨房布草的处理


5. 维持卫生标准和习惯
 
? 确保员工按照标准与程序完成任务
? 维持一个清洁的厨房
? 清洁厨房和设备
? 维持个人卫生


【任职要求】

1. 专业知识技能
2. 运作设备知识
3. 药物清洁知识
4. 英语书写能力
5. 精通计算机程序、熟知软件及电子表格系统
6. 高中毕业
7. 至少五星酒店相关工作2-3 年的经验

Assistant Stewarding Manager

Job Description: Assist the Chief Steward and Supervise Stewarding day-to-day operation. Exercising effective environmentally friendly procedures. Maintain the standards of hygiene, sanitation, cleanliness and safety in kitchens, dishwashing areas, Garbage collection and storage, and any other production areas.

【Key Responsibilities】
1. Ensure hygiene standards are met, and exceeded where possible, in all Food & Beverage Outlets and Kitchens. Maintain service and kitchen equipment in good condition and working order.

2. Responsible for Food & Beverage Department Hygiene
? Organize Mise en Place & Food Preparation
? Assist with overseeing the preparation of equipment for kitchen use
? Assist with overseeing the assembly and preparation of ingredients for menu items
? Assist with overseeing the preparation of simple food items

3. Receive and Store Goods
? Manage the receiving and storage of kitchen goods
? Maintaining superior conditions of all equipment in the department.
? Ensuring that silverware is polished / burnished on a regular basis.

4. Clean and Maintain Equipment and Premises
? Oversee the cleaning and storage of kitchen and restaurant equipment
? Oversee the cleaning of the premises
? Oversee the removal of waste
? Oversee the handling of kitchen linen
? Keep control of all china, glassware, flatware and hollowware, and conduct quantity stock takings

5. Maintain Hygienic Standards and Practices
? Ensure all the staff to carry out the task according to the S&P
? Maintain a hygienic kitchen
? Clean the kitchen and equipment
? Maintain personal hygiene







【Job Requirements】
1. Operating equipment knowledge
2. Working knowledge
3. Cleaning chemicals Knowledge
4. Spoken / written English
5. Computer operation and familiarity with some software packages, including Spreadsheet programs.
6. High School Certificate
7. Industry experience-minimum 2-3 year in a 5 Start Hotel
